Ingredients
- 1 medium green bell pepper, cut into 1/2" strips
- 1 medium red bell pepper, cut into 1/2" strips
- 1 large onion, cut into 1/4" wedges
- 1 plum tomato, cut into 1/4" wedges
- 1 lb boneless, skinless chicken breast halves, cut into 1/4" strips
- 1 pkg (1-1.25 oz) fajita seasoning
- 2 garlic cloves, pressed
- 1 small lime, cut in half

- Optional toppings: salt/pepper, salsa, guacamole, shredded cheese, sour cream
Preparation
Step 1
1) Combine chicken & seasoning mix into small bowl; toss to coast & set aside.
2) Heat Grill Pan over medium-high heat. Lightly spray pan with cooking oil.
3) Add bell peppers & onion to pan; cook 3 minutes without stirring. Stir and cook additional 3 minutes or until vegetables are crisp-tender. Remove veggies from pan & set aside.
4) Spray pan again with cooking oil. Add chicken, cook 2-3 minutes without stirring.
5) Add garlic; stir & cook 3-4 minutes until chicken is no longer pink.
6) Add reserved vegetables & tomato to pan. Squeeze lime over chicken mixture.
7) Cook 1 minute or until heated thoroughly; stir.
8) To serve, spoon portion of mixture in center of each tortilla with desired toppings.
