Greek Salad II

Ingredients

  • 1 English cucumber
  • 5 tomatoes, diced
  • 1 green pepper, seeded and finely diced
  • 1 medium red onion, thinly sliced
  • 11 oz. kalamata olives
  • 7 oz. feta cheese
  • 2 Tbs. capers
  • 1 Tbs. dried oregano
  • 1/2 cup olive oil
  • 2 Tbs. red wine vinegar
  • drop balsamic vinegar
  • salt and freshly ground black pepper

Preparation

Step 1

In a large bowl, combine the cucumber, tomato, onion and pepper. Scatter the olives, feta, capers, and oregano over the salad. Add the olive oil and vinegar and toss the salad well to coat. Season with salt and pepper. Taste to check to seasons and add more vinegar, salt, or pepper, as needed. Serve
