- 1 1/2 # ground meat
- 1 medium onion, sliced
- 1 28-oz can whole tomatoes
- 1 6 oz can tomato paste
- 1 c water and 1 t boullion, or 1 c stock
- 1 16 oz can red kidney beans
- 2 cloves garlic, minced or pressed
- 2 t salt
- 2 t oregano
- 2 t chili powder
- scant t cumin
- 1/8 t crushed red pepper
- 1 bay leaf

Step 1
1. Combine ground meat and onion in a Dutch oven or large saucepan. Brown meat. Drain off fat if using beef.
2. Add tomatoes, tomato paste, water, bouillon, kidney beans, garlic, salt, oregano, chili powder, cumin, red pepper, and bay leaf. Stir to blend. Cover and simmer 1 1/2 hours, stirring occasionally.
3. Remove bay leaf. Serve with crackers.
