Grandma Piep's German Potato Salad

Ingredients

  • Sauce:
  • bacon
  • onions, chopped
  • 1 cup water
  • 4 Tbs vinegar
  • 2 Tbs sugar (or to taste)
  • Salt and pepper, to taste
  • 1 Tbs cornstarch dissolved in 2 Tbs water
  • Potatoes

Preparation

Step 1

Boil potatoes until tender. Cool. Peel and slice into thin slices.

Cut up bacon into small pieces and saute in pan with onions.

Mix sauce ingredients except cornstach together in small saucepan and heat until sugar dissolves and sauce comes to a boil. Mix cornstarch and water and add to sauce and stir until thickened.

Pour over potatoes and mix well.
