- 1 stewing chicken
- 1 cup chopped celery
- 1 cup chopped onion
- 1 cup chopped green pepper
- 2 cans regular RoTel tomatoes
- 1 big can tomato sauce
- 1 package andoui sausage
Stew the chicken and clean from bones, keeping the water cooked in.
Cut up the package of sausage.
Put all of the cut up stuff in a big pot. Add 2 or 3 cups of rice, add 2 cups of broth per cup of rice.
Bring it all to a boil, then simmer until rice is cooked to your desired consistency, stirring so it does not stick to the bottom of the pot (about 30 minutes).
