Ingredients
- 1 cp dried navy beans (soaked overnight)
- 3 - 10 1/2 oz cans chicken broth
- 1 cp water
- 1 1/4 cp chopped onion
- 1 clove garlic, minced
- Salt to taste
- 2 cps chopped cooked chicken breasts
- 1 (4 oz) can chopped green chiles
- 1 tsp ground cumin
- 1/4 - 1/2 tsp dried oregano
- 1/4 tsp ground red pepper

Preparation
Step 1
Sort and wash beans; place in a Dutch oven. Cover with water 2 inches above the beans; let soak 8 hours. Drain the beans and return to Dutch oven. Add broth and next 4 ingredients. Bring to a boil: cover, reduce heat, and simmer 2 hours, stirring occasionally. Add chicken and remaining ingredients. Cover and simmer about 30 minutes or longer. Serve with Monterey Jack or Mexican grated cheese and tortilla chips.
