Ingredients

  • 10 - 15 LB BRISKET TRIMMED OF EXCESSIVE FAT
  • SANTA MARIA TANGY RUB
  • 1 TBSP KOSHER SALT
  • 1 TBSP BLACK PEPPER
  • 1 TBSP GROUND MUSTARD
  • 1 TBSP PAPRIKA
  • 1 TBSP GARLIC POWDER
  • 1 TBSP ONION POWDER
  • 1 TBSP BROWN SUGAR
  • 1 TBSP DRIED OREGANO
  • 1 TSP DRY ROSEMARY
  • 1/2 TSP DRY SAGE
  • 1/2 TSP DILL

Preparation

Step 1

TRIM BRISKET OF EXCESSIVE FAT, KEEP 1/4 INCH ON,

MIX RUB TOGETHER AND APPLY TO BRISKET, PLACE IN TUPPERWARE CONTAINER, COVER AND PLACE IN FRIDGE OVER NIGHT. STORE REMAINING RUB IN AIR TIGHT CONTAINER

REMOVE FROM FRIDGE AND PLACE ON COUNTER. PREHEAT OVEN TO 350F.

PLACE BRISKET IN A BAKING TYPE PAN AND PLACE INTO OVEN, COOK TILL 175 - 180F

REMOVE FROM OVEN PLACE ON STOVE TOP LET STAND 10 MINUTES BEFORE SLICING
