Three Bean Salad

Ingredients

  • 1 15-oz can cannellini beans, rinsed and drained
  • 1 15-oz can kidney beans, rinsed and drained
  • 1 15-oz can black beans, rinsed and drained
  • 1 Red Bell pepper, diced
  • 1 small yellow onion, or 3 scallions chopped
  • 1 teaspoon dried parsley
  • 1 teaspoon dried rosemary
  • 1/3 cup apple cider vinegar
  • 1/3 cup granulated sugar
  • 1/4 cup olive oil
  • 1-1/2 teaspoons salt
  • 1/4 teaspoons black pepper

Preparation

Step 1

In a small bowl, whisk together the cider vinegar, sugar, olive oil, salt and pepper.

In a large bowl, mix the cannellini beans, kidney beans, black beans, onions/scallions, red bell pepper, parsley, and rosemary.

Add the dressing to the beans. Toss to coat.

Chill beans in the refrigerator for several hours, to allow the beans to soak up the flavor of the dressing
