  • 10 1/2 oz. water
  • 2 1/2 t instant yeast
  • 2 oz. sugar
  • 21 oz. all purpose flour
  • 2 t salt
  • 1 oz. dry milk
  • 1 oz. shortening
  • 1 oz. butter
  • 1 large egg



Step 1

Combine warm water with the yeast and sugar. Allow to sit for ten minutes or until yeast is activated.
Combine yeast mixture with rest of ingredients in mixer with dough hook attachment. Mix on low speed for 1 minute , if too wet or dry make adjustments. Dough should pull away from bowl. After adjusting mix on medium speed for 7 or eight minutes. Dough temperature should be about 80 degrees.
Cover dough and put in a warm, draft free place until doubled in volume.
Divide into desired shapes , cover and let double in size again.
Pre heat oven to 375 degrees.
Carefully brush on beaten egg before baking.
Bake until golden brown.
