Mom's Italian Meatballs

These were adapted from my grandma's recipe. My grandma, mom, aunt and I still make them at least once a month. Combine with my semi-homemade spaghetti sauce and your favorite pasta for a meal the whole family will love. My 2 year old son eats four meatballs at a time!

Ingredients

  • 1 - 1 1/4 lb. ground beef or combination of beef and pork
  • 1 c. Italian style bread crumbs
  • 1/2 c. evaporated milk or half and half
  • 1 clove garlic, minced
  • 2 eggs
  • 1/2 tsp. salt
  • 1/4 tsp. pepper
  • 1/4 c. grated Romano or Parmesan cheese
  • 1 tsp. olive oil

Step 1

Mix all ingredients together by hand in a medium bowl. Form into golf ball sized balls. There are several methods to cooking the meatballs. Each person in my family does it differently.

Mom's way: Brown lightly on all sides in non-stick skillet sprayed with cooking spray. Drop into simmering sauce, cover with lid and simmer gently for 15-20 minutes.

Aunt Nancy's way: Drop raw meatballs into simmering sauce, cover with lid and simmer gently for 45-60 minutes.

Andrea's way: Bake at 350 for 20 minutes. Drop into simmering sauce, cover with lid and simmer gently for 15-20 minutes
