Chopped Greek Salad

I love to take this recipe to the pool for a healthy lunch that won't spoil. For a heartier meal, marinate chicken tenders in Greek yogurt and a Greek spice mix, grill and serve a long side the salad or stuff it all into a pita - yum!

Ingredients
- Note:
- 1 large English cucumber, chopped
- 1 red onion, chopped
- 2-3 cloves garlic, minced
- 1 can chopped black olives, drained
- 3/4 c. chopped parsley
- 1 container spiced crumbled feta cheese
- 1 container low fat crumbled feta cheese
- olive oil
- red wine vinegar
- salt and pepper
- Can add other chopped vegetables of your choosing such as celery or tomatoes.

Step 1
Combine all ingredients including oil and vinegar, salt and pepper to taste. Let marinate for at least 1 hour in the refrigerator. Stuff into halved pita bread for a yummy sandwich.
