Sweet Potato Casserole

Ingredients
- 4 Large sweet potatoes, peeled and cut in 1 inch cubes
- 1/2 C brown sugar
- 1/3 C milk
- 3 eggs, beaten lightly
- 1/4 C butter
- 1 tsp vanilla
- 1/4 tsp salt
- 1 C mini marshmallows

Preparation
Step 1
Preheat oven to 350 degrees
Boil sweet potatoes on stove until tender, drain
Transfer to a food processor and process until smooth
Add brown sugar, eggs, milk, butter and salt. Process until thoroughly combined
Transfer to a baking dish.
Bake until puffed approximately 1 hour
Then position top oven rack 4 inches from top
Turn on broiler.
Top potatoes with the marshmallows and broil until golden 30 to 60 seconds
