Ingredients
- 1 flax egg (1 tbsp. ground flax + 3 tbsp. water)
- 3 large overripe bananas (or 4 small)
- 1 tsp. cinnamon
- 1/4 + 1/8 cup unsweetened applesauce
- 1 tsp. vanilla essence
- 1 cup 100% whole grain spelt flour
- 1/2 cup brown rice flour
- 1 tsp. baking powder
- 1 tsp. baking soda
- 1/2 tsp. salt (omit for healthier version)
- 1/2 cup chopped walnuts or 1/2 cup blueberries (optional)
- 2 tbsp. date paste (optional)

Step 1
1. Combine flax and water in a small bowl and let sit for about 10 minutes.
2. Mash bananas thoroughly in a bowl. Add cinnamon, applesauce and vanilla and mix well using a whisk. Add flax egg and mix together thoroughly.
3. Combine flour, baking powder, baking soda and salt in a separate bowl. Stir dry ingredients into wet mixture until just combined. Add walnuts, if using.
4. Line a muffin tray with 9 muffin cups. Spoon mixture evenly into cups (fairly full). Bake at 375 degrees for 20 minutes. Remove muffins from tray and onto cooling rack. Once fully cooled, store in an airtight container (will keep longest in the fridge).
Note: This is not a very sweet muffin, for added sweetness simply add some dates or raisins.
