Ingredients

  • 4 large baking potatos (or 6 regular)
  • 1 1/2 tsp. pepper
  • 1 tsp salt
  • 3/4 cup butter
  • 3/4 flour
  • 6 cups milk
  • 1/2 cup crispy fried bacon (crumbled)
  • 2 Tbs of chopped green onions
  • 1 Cup shredded Cheddar cheese

Step 1

Bake potatos and set aside to cool a little. In a big soup pot, melt your butter. Once it's melted sift your flour into until it makes a smooth paste. Begin adding milk, a cup at a time. Keep the heat low or the milk will scald. That is why it is best to add a cup at a time until the mixture is all pretty warm. Stir constantly to keep from sticking. Once this base is heating, add the remaining ingredents. The potatoes are best cubed pretty small. Simmer until it thickens and is hot. You can keep some of the cheese and bacon for topping. Some like to top with a little sour cream. This recipe will not work if your potatoes are not already baked.
It doesn't cook long enough to cook raw potatoes.
