Ingredients

  • 2 T olive oil
  • 2 T ground cumin
  • 2 chipotle chiles in adobo sauce, drained and minced
  • 1 large onion, finely chipped (1 1/2 C)
  • 1 medium red bell pepper, diced ( 1 C )
  • 5 cloves garlic, minced ( 5 t.)
  • 2 14-oz. cans black beans, rinsed and drained
  • 24 oz. dark beer
  • 1 14-oz. can diced tomatoes
  • 1 C fresh or frozen corn
  • Green onions, sliced for garnish; optional 2 limes, quartered

Preparation

Step 1

Warm oil in 3-qt. pot over medium heat. Add cumin and chipotles. Cook 1 minute. Stir in onion, bell pepper and garlic. Saute 5-7 minutes or until vegetables are soft. Add beans, beer, tomatoes and corn. Bring to a boil. Reduce heat to medium-low. Simmer, uncovered, 45 minutes or until thick. Serve with scallions and lime.
