Ingredients

  • 4 Tablespoons butter
  • 2 heads green cabbage, cubed
  • 2 onions, finely chopped
  • 6 cloves garlic, finely chopped
  • 4 carrots, peeled and finely chopped
  • 4 Yukon Gold potatoes, peeled and finely chopped
  • 4 stalks celery, finely chopped
  • 2 cups frozen peas
  • 1 red and 1 green pepper, finely chopped
  • 1 gallon home made chicken or beef broth
  • 2 cans chopped tomatoes
  • 1 can tomato sauce or to taste
  • 1 small can tomato paste
  • 1 teaspoon dried thyme
  • 1 teaspoon caraway seeds
  • optional: cooked rice
  • optional: lemon juice or cider vinegar to taste

Preparation

Step 1

Melt butter in large pot. Sauté vegetables in butter until softened.

Add remaining ingredients and simmer until vegetables are tender.

Optional: add lemon juice or cider vinegar to taste.

Optional: serve soup with a scoop of cooked rice
