Ingredients
- 4 Tablespoons butter
- 2 heads green cabbage, cubed
- 2 onions, finely chopped
- 6 cloves garlic, finely chopped
- 4 carrots, peeled and finely chopped
- 4 Yukon Gold potatoes, peeled and finely chopped
- 4 stalks celery, finely chopped
- 2 cups frozen peas
- 1 red and 1 green pepper, finely chopped
- 1 gallon home made chicken or beef broth
- 2 cans chopped tomatoes
- 1 can tomato sauce or to taste
- 1 small can tomato paste
- 1 teaspoon dried thyme
- 1 teaspoon caraway seeds
- optional: cooked rice
- optional: lemon juice or cider vinegar to taste

Preparation
Step 1
Melt butter in large pot. Sauté vegetables in butter until softened.
Add remaining ingredients and simmer until vegetables are tender.
Optional: add lemon juice or cider vinegar to taste.
Optional: serve soup with a scoop of cooked rice
