Twice Baked Potato Casserole
- 6 medium potatoes, baked
- 1/2 teaspoon salt
- 1/4 teaspoon pepper
- 1 lb bacon, cooked and fat drained off
- 3 cups sour cream
- 2 cups shredded mozzarella cheese
- 2 cups shredded cheddar cheese
- 2 green onions, chopped
- 6 strips bacon cut into small pieces and cooked in a frying pan with all fat drained off

Cut peeled potatoes in 1 inch cubes.
Place half in greased 13x9 baking dish.
Sprinkle with half the salt, pepper, and bacon.
Top with half the sour cream and cheeses.
Bake, uncovered at 350* for 25 minutes.
Top with the rest of your sour cream and cheeses and the bacon bits and bake for another 15 minutes.
Sprinkle with onions.
