Ingredients
- 1 Tbsp. oil
- 1 onion, chopped (1 1/2 cups)
- 3 cans (14 1/2 oz. each) chicken broth
- 1 can (4 1/2 oz) diced tomatoes with basil, garlic and oregano
- 1 can (15 oz) red kidney beans, rinsed and drained
- 1/2 cup ditalini pasta
- 1/4 tea. pepper
- 2 cups cooked turkey or chicken
- 2 cups cooked vegetables
- 2 Tbsp. chopped fresh parsley
- Shredded Parmesan cheese, optional
Preparation
Step 1
In large pot, heat oil over medium heat. Add onion; cook, stirring, until almost tender, about 10 minutes. Add broth, tomatoes with their juices, kidney beans, pasta, and pepper.
Bring mixture to boil. Reduce heat to medium low; cover and cook until pasta is just tender, 12-15 minutes. Stir in parsley.
