Carabbas Chicken Bryan
- 4 boneless chicken breast
- 1 log of goat cheese
- 1/4 cup onion and 1/4 garlic
- 1 stick butter
- 1/2 cup white wine
- 1/8 cup lemon juice
- 1/4 jarred roasted red peppers
- 1/8 cup basil
1-melt 1/2 stick of butter and cook onion and garlic for 5 minutes.
2-add wine and lemon juice, reduce heat to simmer, and cook for 15 minutes to reduce.
3-add rest of 1/2 stick of butter slowly
4- add peppers and basil till heated and remove to bowl.
Now, brush chicken with olive oil and salt and pepper and grill until done.
Top with cheese and grill until melted and spoon a small amount of sauce over each piece.
