Ingredients
- 5 ears of corn, cut off cob
- 4 strips of bacon, fried crisp and crumbled
- 2 ribs celery, finely diced
- 1 red bell pepper, finely diced
- 1 green pepper, finely diced
- 1 small onion, finely diced
- salt and pepper to taste
- 4 Tbs. butter, divided
- dash cayenne pepper
- dash cumin
- 1/4-1/2 tsp. chili powder

Preparation
Step 1
In skillet, melt 2 Tbs. of the butter. Add celery and onion, cook until softened. Add peppers, salt and pepper. Continue cooking until all vegetables are soft.
Add corn and saute for several minutes until heated through and bubbly.
Melt remaining 2 Tbs. butter. Add cumin, cayenne pepper and chili powder.
Pour over corn mixture. Add bacon.
