Pumpkin Pie (Carol's)

Ingredients

  • 1/8 teaspoon salt
  • 2/3 cup sugar
  • 1 teaspoon cinnamon
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon ginger
  • 2 slightly beaten eggs
  • 1 2/3 cup milk
  • 1 1/2 cups pumpkin

Preparation

Step 1

Sift all dry ingredients. Stir in the beaten eggs; add milk and pumpkin. Mix thoroughly

Pour into pastry lined pie plate. (Aunt Carol used a graham cracker crust, but everything else is the same - according to the same recipe I have from her, FYI)

Bake 450 degrees for 10 minutes, then lower oven to 325 and bake another 35 minutes. This pie is NEVER done in 45 minutes--be patient and bake another 5 minutes at a time until knife inserted in center comes out clean (could be 55-60 minutes). Worth the wait!
