Ingredients
- 2 tbsp olive oil
- 1 1/2 cup broken cashew nut pieces
- 1 cup finely chopped onions
- 2 garlic cloves, minced
- 1 cup zucchini, diced small
- 2/3 cup diced carrots
- 1 cup thinly sliced celery
- 1/2 tsp chili powder
- 1 tsp cumin
- 1 vegetable stock cube
- 1 X 14oz can diced tomatoes
- 2 tsp tomato paste
- 2 tsp finely chopped fresh basil
- 2/3 cup milk diluted with 2/3 cup water
- salt and freshly ground pepper to taste

Step 1
Heat 1 tbsp oil and toast cashews until golden. Remove from pan and set aside. Heat remaining oil and fry onion until soft. Add garlic, veggies and cashews. Cook covered for 10 mins, stirring occasionally. Add spices and cook 2 mins. Mix in stock cube, tomatoes, paste and basil and combine. Stir in milk and water. Simmer 15-20 covered.
Delicious topped with grated cheese
