Step 1

Thoroughly scrub the outside of your potato. Piece the potato several times on each side with a fork. Drizzle with some good quality extra-virgin olive oil and rub all over the potato. Sprinkle all over with coarse ground sea salt or kosher salt. Place directly on the rack in an oven that has been preheated to 400 degrees F. Bake for one hour, turning over halfway through the baking time. I also put a pan underneath the potatoes to catch any oil drips. Whatever you do, do not wrap your potatoes in foil -unless you want a steamed potato with heavy, wet insides and not a baked potato with light, fluffy insides! When they are finished, the skin should be crackly and the inside should be soft. Take out of the oven. Make a dotted line from end to end with your fork, then crack the potato open by squeezing the ends towards one another. It should pop right open revealing a fluffy cloud of perfect white potato! Top with whatever toppings you would like!
