Shredded Potato Quiche
- 16 oz. pkg. frozen shredded hash brown potatoes, thawed
- 3 Tbs. melted butter
- 3 whole eggs and 3 egg whites
- 1 1/2 c. shredded swiss cheese
- 1 c. cooked ham, cubed
- 1/2 tsp. dry mustard
- 1/2 c. milk
- salt and pepper to taste
Press thawed potatoes between paper towels until dry.
Preheat oven to 375. Lightly grease a 9" pie pan.
Press potatoes into pan. Brush with melted butter. Bake until lightly browned, about 15 minutes.
Mix eggs, milk, cheese, ham, dry mustard salt and pepper.
Pour over baked crust.
Bake in Preheated oven until center is set, about 20 min.
Sauted mushrooms and onions are optional.
For quiche pan use 3/4 c. milk, 5 whole eggs and 5 egg whites and bake for 30-35 min.
