Ingredients
- 1 1/2 lbs. boneless chicken breasts
- 3 green, red and/or yellow peppers (sliced)
- 1 red onion (peeled & sliced)
- 2 T olive oil
- 1/2 c chopped yellow onion
- 1 T chopped garlic
- 1 c chicken broth
- 1 package garlic and herb sauce mix (Knorr)
- 1/12 c milk (can use low fat)
- 1/4 tsp. red pepper flakes
- 1 T lemon juice
- 1 T basil
- 1 T parsley
- 1 lb. angel hair pasta(cooked)
Preparation
Step 1
Season chicken with salt if desired. Coat with cooking spray and cook in pan 8 minutes or no longer pink. Let sit 10 minutes and slice. In skillet over medium heat, cook peppers, red onions in olive oil 5 minutes or until tender. Remove from skillet and set aside. In same skillet cook yellow onion and garlic. Add next 4 ingredients and bring to a boil. Reduce heat and let simmer 2 minutes. Stir in next 3 ingredients. Serve chicken and vegetables over pasta with sauce.
