Ingredients

  • 1/4 onion, sliced in ribbons
  • 1/2 lb. bacon
  • 1 bottle clam juice
  • 1 can baby clams
  • 1 pt. half and half
  • 2 T. butter
  • 2 T. flour

Step 1

Fry the bacon in soup pot and remove. Slice the onion and fry in the bacon grease. Remove onions. Peel and cube potatoes. Stir the potatoes in the bacon grease, then remove to a bowl and discard the grease. Cover potatoes with water and parboil (fork will easily pierce 1/3 way through potato.) When done, strain. Heat potatoes, add onions, clam juice, half and half,a little milk and seafood seasoning to taste. Make a roux with the butter and flour. Cook till pale yellow, add some of the broth to thin the roux, and then add it to the soup. Add the onion and clam juice from the can. Cook until the potatoes are done. Then add clams. Put bacon in bottom of soup bowls and pour individual serving over the bacon. Voila!
