Tomato Basil Bread

Ingredients
- 1 1/4 C water (100°)
- 1 tbl vegetable oil
- 1/4 C tomato paste
- 3 C bread flour
- 2 tsp basil
- 2 tsp sugar
- 1 tsp salt
- 1 package active dry yeast ( 2 1/2 tsp)

Step 1
In a large bowl combine the water, yeast and sugar. Let sit for 5 minutes to bloom the yeast. Combine the rest of the ingredients but withhold 1/2 C of the flour. Knead the dough until smooth and elastic, approx 10 minutes. Add the rest of the flour as necessary to keep the dough from being too sticky.
Put the dough in a lightly oiled container, cover with plastic wrap and let rise until doubled. Gently deflate, form into loaf and put in a greased large loaf pan and let rise until it crests over the top of the pan.
Heat oven to 350° and bake for 15-20 minutes or until the internal temperature reaches 190°.
