Ingredients
- 1-3/4 c. all-purpose flour
- 5 T. sugar
- 2-1/2 t. baking powder
- 1/2 t. salt
- 1/3 c. butter
- 1/2 c. currants, raisins or dried cherries
- 2 egg, divided
- 4 to 6 T. half-and-half
Preparation
Step 1
In a large bowl, combine flour, sugar, baking powder and salt. Cut in butter until mixture resembles fine crumbs. Stir in fruit, one beaten egg and just enough half-and-half for dough to leave the sides of the bowl. Turn dough onto a lightly floured surface; knead lightly. Roll out dough 1/2 inch thick; cut out with a floured 2-1/4” biscuit cutter.
Place scones on an ungreased baking sheet; brush with remaining beaten egg. Let stand for 5 to 10 minutes. Bake at 400 degrees for 10 to 12 minutes, until golden. Immediately remove from baking sheet.
Makes 8 scones.
