Lemon Tea Cakes

Maybe use with mini molded cake pan

Ingredients

  • 2 eggs
  • 1/2 c. sugar
  • zest of a whole lemon
  • 2 tablespoons lemon juice
  • 1 tsp. vanilla
  • pinch of salt
  • 1 c. flour
  • 2 tsp. baking powder
  • 8 tablespoons of butter, melted
  • powered sugar, optional

Preparation

Step 1

Whisk together eggs, sugar, lemon zest, lemon juice, vanilla and salt until well blended.

Gently fold in flour and baking powder into egg mixture with a spatula until well incorporated. Mix in butter.

Divide batter among 12, greased muffin pan cups, filling about halfway.

Bake at 375 for about 10 minutes until the cakes have risen and are golden.

Transfer to wire rack somewhat immediately after pulled from oven, using a knife on the edges to help with removal.

Serve warm with optional dusting of powdered sugar.
