BROILED PARMESAN TOMATOES

Ingredients

  • 3 large tomatoes
  • 1 T olive oil
  • 1 garlic clove, minced
  • 1/4 t coarsely ground pepper
  • 1 T minced fresh basil or 1t dried basil
  • 3/4 c soft bread crumbs
  • 2 T grated Parmesan cheese

Preparation

Step 1

Slice tomatoes in half. Using a small spoon, remove seeds. Place on broiler pan coated with nonstick cooking spray.

Combine oil, garlic, pepper. Brush over tomatoes. Sprinkle with basil.

Broil about 6" from heat for 3-4 min. or until heated through.

In small bowl, combine bread crumbs and cheese. Sprinkle over tomatoes.

Broil 1-2 min. longer or until crumbs are slightly browned. Serve immediately.
