Ingredients
- 2 cups coarsely ground coconut macaroon cookies
- 3 egg yolks
- 1 egg
- 1/4 cup sugar
- 1/4 cup amaretto
- 1/2 cup whipping cream
- Sliced almonds, toasted
Preparation
Step 1
Spread cookie crumbs on baking sheet. Bake at 300 degrees for 10 minutes. Cool. Combine egg yolks, egg, and sugar in mixing bowl. Beat at high speed until sugar is dissolved. Add amaretto. Whip the cream and fold in the mixture. Spoon cookies into 8 dessert glasses. Top with amaretto mixture. Freeze until firm.
