  • 1/3 c brown sugar
  • 1 t ground cinnamon
  • 2/3 c white sugar
  • 1/2 c butter, softened
  • 2 eggs
  • 1 1/2 t vanilla extract
  • 1 1/2 c all purpose flour
  • 1 3/4 t baking powder
  • 1/2 c milk
  • 1 apple peeled and chopped

Step 1

Preheat oven to 350. Grease and flour a 9x5 loaf pan.

Mix brown sugar and cinnamon together in a bowl.

Beat white sugar and butter in a bowl using an electric mixer until smooth and creamy. Beat in the eggs one at a time, until incorporated and then add vanilla.

Combine flour and baking powder in a bowl; stir into creamed butter mix. Mix milk into batter until smooth. Pour half the batter into the loaf pan. Add half the apples and half the brown sugar mix. Lightly pat apples into the batter. Pour the remaining batter over the apples and top with remaining apples and brown sugar mix. Lightly pat the apples into the batter again. Swirl the brown sugar mix through the apples using a finger or spoon.

Bake in the preheated oven until a toothpick comes out clean, 30-40 min.
