  • 1/2 cup all purpose flour
  • 2 lg eggs
  • 1 cup panko
  • 1/4 cup grated parmesan
  • 1 pork tenderloin about 1 lb
  • Salt
  • 1/2 cup marinara sauce
  • 1/2 cup mozzarella

Step 1

Place rack in center oven, preheat 425. Line a rimmed baking sheet with foil. Place a wire rack on top and mist rack with cooking spay. Place flour in shallow bowl place eggs in separate boel beat lightly. Combine panko and parmesan in third bowl.

Cut tenderloin into 8 pieces and pound to a 1/4 inch thickness between sheets of plastic wrap. Sprinkle with salt -dredge in flour, dip in egg and coat in panko mixture.

Place cutlets on rack and bake until through and just beginning to turn golden around edges 15 -20 minutes. Remove from oven - set oven to broil. Spread 1 Tbsp marinara on each cutlet and sprinkle with mozzarella. Return to oven and broil until cheese is bubbling and golden about 2-3 minutes.
