Mushroom Croustades

Great for a dinner party hors doeuvre. Must be prepared ahead, though you will need to serve it immediately. Baking time is only 10 minutes.

Ingredients

  • CRUST:
  • 24 thin slices of very fresh white bread
  • 2 T butter or margarine
  • FILLING:
  • 4 T butter or margarine
  • 3 T green onion, chopped
  • 1/2 lb. fresh mushrooms, chopped
  • 2 T flour
  • 1 C heavy cream
  • 1/2 t salt
  • 1/8 t black pepper
  • 1 T parsley, chopped
  • 1/5 T chives, chopped
  • 1/2 t lemon juice
  • 2 T Parmesan cheese, grated

Preparation

Step 1

Cut bread into 3-inch circles. Grease mini muffin tins with butter. Carefully fit in bread rounds. Bake for 10 minutes at 400 degrees, or until lightly browned. Remove from tins and cool. (At this point, crusts may be frozen on a baking sheet. When frozen, store in a plastic bag).

Slowly melt butter, add onions and saute but do not brown. Add mushrooms and cook until moisture evaporate, 10-15 minutes. Remove from heat. Add flour and stir. Immediately pour in cream. Return to heat and bring to a boil. Reduce heat and simmer 1 minute. Remove from heat and add seasonings. Cool. Refrigerate until ready to use.

Fill croustades with mushroom mixture. Top with cheese. Dot with butter. Bake for 10 minutes at 350 degrees or until bubbly.

Note: You can make both parts ahead of time and assembled right before baking.
