Banana Bread

This banana bread is simple and crusty on the outside and moist in the center. It is from Food and Wine Magazine.
Ingredients
- unsalted butter
- 1 1/4 c flour, plus dusting
- 1 tsp baking soda
- pinch salt
- 2 eggs, beaten
- 1/2 c canola oil
- 1 c sugar
- 2 large very ripe bananas, mashed
- Confectioners' sugar for dusting

Step 1
Preheat oven to 350. Butter and flour a 9x5 inch metal loaf pan. In a medium bowl, whisk the 1 1/4 c flour with baking soda and salt. In another bowl, whisk eggs with oil, sugar, and mashed bananas. Stir the banana mixture into dry ingredients.
Scrape the batter into prepared pan and bake in the center of the oven for about 50 min, until bread is golden and toothpick inserted comes out clean. Transfer pan to a cooling rack and let cool for 15 mins, then turn bread out onto rack and cool completely. Dust top with confectioners' sugar, cut into slices and serve.
It can be wrapped in plastic and refrigerated for up to 1 week.
