Flounder Piccata

Ingredients

  • 8 flounder fillets (abt 2 oz each)
  • 1/2 tsp each kosher salt & black pepper
  • 1/4 C all-purpose flower
  • 4 Tsp olive oil, divided
  • 1/4 C dry white wine
  • 3 TBL fresh lemon juice
  • 1 TBL capers, drained
  • 3 3
  • TBL unsalted butter
  • 1/2 tsdp black pepper
  • 1/4 tsp kosher salt
  • 2 TBL minced fresh parsley

Preparation

Step 1

Blot flounder fillets dry & season w/ S & P
DREDGE in flour
HEAT 2 tsp oil over med-high heat until it shimmers
add 1/2 fillets & cook until golden - abt 2 min per side
transfer fillets to platter
tent w/ foil.
repeat heating & cooking w/ remaining oil & fillets
ADD wine, lemon juice & capers to skillet
]cook 30 seconds
OFF HEAT swirl in butter until it melts
season w/ S Y P
SERRVE w/ sauce & garnish w/ parsley
