Ingredients

  • 6 oz. (about 2 cups) uncooked high-fiber rotini pasta
  • 2 cups finely chopped kale
  • 2 cups halved cherry tomatoes
  • 2 cups quartered mushrooms
  • 1 cup chopped cucumber
  • 1 cup chopped red bell pepper
  • 1 cup chopped red onion
  • 1/3 cup light Italian dressing
  • 16 slices turkey pepperoni, quartered
  • 2 sticks light string cheese, cut into coins
  • 1/4 cup sliced jarred pepperoncini (drained)

Step 1

Prepare pasta according to package instructions. Drain and rinse with cold water. Transfer to an extra-large bowl.

Add all ingredients to the bowl, and toss to mix.
