Ingredients
- 6 oz. (about 2 cups) uncooked high-fiber rotini pasta
- 2 cups finely chopped kale
- 2 cups halved cherry tomatoes
- 2 cups quartered mushrooms
- 1 cup chopped cucumber
- 1 cup chopped red bell pepper
- 1 cup chopped red onion
- 1/3 cup light Italian dressing
- 16 slices turkey pepperoni, quartered
- 2 sticks light string cheese, cut into coins
- 1/4 cup sliced jarred pepperoncini (drained)

Preparation
Step 1
Prepare pasta according to package instructions. Drain and rinse with cold water. Transfer to an extra-large bowl.
Add all ingredients to the bowl, and toss to mix.
Serve it up! (Cover and refrigerate leftovers.)
