Ingredients

    oz. (about 2 cups) uncooked high-fiber rotini pasta

  • 2

    cups finely chopped kale

  • 2

    cups halved cherry tomatoes

  • 2

    cups quartered mushrooms

  • 1

    cup chopped cucumber

  • 1

    cup chopped red bell pepper

    cup chopped red onion

  • 1/3

    cup light Italian dressing

    slices turkey pepperoni, quartered

    sticks light string cheese, cut into coins

    cup sliced jarred pepperoncini (drained)

Directions

Prepare pasta according to package instructions. Drain and rinse with cold water. Transfer to an extra-large bowl. Add all ingredients to the bowl, and toss to mix. Serve it up! (Cover and refrigerate leftovers.) MAKES 4 SERVINGS
