Pecan Pies - Tiny Ones

Ingredients
- 3/4 cup firmly packed brown sugar
- 1 T butter
- 1 egg
- Dash of salt
- 1 tsp. vanilla
- 2/3 cup coarsely chopped pecans
- Pastry Shells (recipe follows)

Step 1
Combine first 5 ingredients in a small bowl; beat at medium speed of electric mixer just until smooth. Stir in pecans.
Pour into pastry shell and top with another ½ tsp pecans. Bake pies at 325 for 25 minutes or until filling is set. Makes 2 dozen.
I usually double this recipe for showers.
Pastry Shells
1 (3 oz.) package of cream cheese, softened
½ cup butter or margarine (softened)
1 cup all-purpose flour
Combine cream cheese and butter in a small bowl. Cut together with a pastry blender until very small. Add flour, mixing well. Chill dough for 1 hour then shape into 24 (1 inch) balls. Place in ungreased 1 ¾ inch muffin tins, shaping each into a shell. Yield: 2 dozen.
