Ingredients

  • Tomato sauce. - Blend all together til smooth and set aside

    C sun dried tomatoes soaked for 6 hrs

    roma tomatoes

    garlic cloves

    tsp salt

    Tbsp onion

  • 3

    Tbsp olive oil

    Tbsp dried basil

    tsp dried oregano

    tsp thyme

    Tbsp agave nectar or 3 pitted dates

  • Mushroom layer - marinate for 2 hrs - then drain and set aside

  • 3-4

    C sliced mushrooms

    Tbsp or more raw soy sauce or 1 Tbsp miso and 2 Tbsp water

  • Noodle sheets & marinated veggies

    zucchini - cut on a mandolin into wide paper thin slices & set aside

  • Combine all below and let marinate for 16 hrs in the fridge

  • Herb ricotta cheese - combine all in food processor til smooth-put in glass bowl, cover with a moist terry cloth towel and set it out for 6 hrs at room temp - then refrigerate til ready to use

  • Other ingredients when assembling lasagna

    cup spinach

  • 1/2

    C chopped drained raw olives

  • 1/2

    C fresh basil

Directions

Assembling the lasagna Put thin slices of zucchini on the bottom of glass lasagna pan. Top this layer with a thin layer of the ricotta cheeze, top the cheeze layer with a layer of mushrooms, then again the zucchini, top that layer with the tomato sauce, top the tomato sauce layer with a layer of marinated sliced onions & peppers,top that with more zucchini slices, layer on top of that more ricotta cheese, then top that with a layer of spinach leaves, then top that with some marinated sliced onions and peppers, then again with the zucchini and then top the whole thing with the tomato sauce and garnish the top with chopped olives and fresh basil leaves. Now, cover with plastic wrap and put into the fridge to set up for about 3-5 hours. Note. Can also add marinated eggplant as one of the layers or your favorite veggie.
