Ingredients
- 6 medium red potatoes, peeled & cubed
- 2 celery ribs, chopped
- 2 hard-cooked eggs, chopped
- 1/4 c. chopped onion
- 2 small jalapeno peppers, seeded & chopped
- 1/4 c. mayonnaise
- 3 tsp. spicy brown mustard
- 2 Tbs. southwest spicy sweet hot mustard
- 3 tsp. Tobasco
- 1/4 tsp. cumin
- 1/4 tsp. pepper
Preparation
Step 1
Place potatoes in saucepan & cover with water. Bring to boil & reduce heat. Cover & cook 10-15 min. or until tender. Drain & cool to room temperature. Combine potatoes, celery, eggs, onion & jalapenos. In small bowl, combine mayonnaise, mustards, Tobasco, cumin & pepper. Pour over potato mixture & toss gently to coat. Cover & refrigerate overnight.
