Ingredients

  • 1 TBSP olive oil
  • 1 lb flank steak, trimmed
  • 1/2 tsp of each salt and pepper
  • 3 cloves of garlic, thinly sliced
  • 1 shallot thinly sliced
  • 1/4 cup balsamic vinegar
  • 2 cups cherry tomatoes, quartered
  • 1/3 cup basil, divided
  • 1/3 cup green onions, thinly sliced

Preparation

Step 1

Heat skillet with oil. Sprinkle steak with salt and pepper and add to pan. Cook 5 minutes on each side until it's done. Put on board and let stand for 5 minutes. cut across the grain.
Add garlic, shallots to pan and saute 1 ½ minutes, until lightly browned.

Add vinegar and cook util it is mostly evaporated. add tomatoes, basil and green onions.
