Mexican Chicken

Ingredients

  • l Tbs. Oil
  • 4 skinless, boneless chicken breasts
  • 10 oz. can diced tomatoes with
  • Green chile peppers
  • 15 oz. can black beans, rinsed and drained
  • 8.76 oz. can whole kernel com, drained
  • pinch cumin

Preparation

Step 1


In a large skillet, heat oil over medium high heat. Brown chicken breasts on both sides. Add all
other ingredients. Reduce heat and let simmer for 25 min. Serve over rice.
