Shrimp Risotto with pas

Ingredients

  • 1/2 lb shrimp
  • 2 Tbsp butter
  • 1 sm onion, finely chopped
  • 3 lge minced garlic cloves
  • 1 cup short grain rice
  • 1 cup dry white wine or apple juice'1/2 tsp salt
  • 1/4 tsp cayenne
  • 10 0z chicken broth
  • 3.5 to 4 cups water
  • 1 cup peas
  • 1/2 cup Parmesan
  • 1/2 cup chopped fresh parsley

Step 1

Heat 1 Tbsp butter in large saucepan over med heat. Add onion and garlic, saute, stirring often until onion has softened about 5 min. Add remaining butter and rice. Stir until rice is slightly translucent, about 2 min. Add 1/c wine, salt and cayeene and stir until absorbed. Add remaining wine, stirring until absorbed. Add broth, 1/4 cup at a time, stirring until absorbed. Add 1/4 cup water, stirring until absorbed and then rest of water. Stirring and cooking will take about 35-40 min. When rise is almost tender, very creamy and still soupy, stir in shrimp and peas. Continue stirring often until seafood is cooked and peas are hot. Stir in cheese and parsley.
