Ingredients

  • 1 pound ground turkey (see note)
  • 1/2 cup chopped onion
  • 1/2 cup chopped green pepper
  • 1 clove garlic, minced
  • 3/4 cup dried kidney beans, cooked
  • 1 cup water
  • 3 medium tomatoes, peeled and chopped
  • 1 can (6 ounces) no-salt added tomato paste
  • 1 teaspoon chili powder
  • 1/2 teaspoon dried oregano leaves
  • 1/2 teaspoon ground cumin
  • 1/8 teaspoon ground red pepper

Preparation

Step 1

In large heavy pot, brown turkey; pour off any excess fat. Add onion, green pepper and garlic; cook 2 minutes, stirring occasionally.
Add beans, water, tomatoes, tomato paste, chili powder, oregano, cumin and red pepper; cover. Simmer for 1-1/2 hours, stirring occasionally. Serve hot with crackers. Makes 6 servings.
Note: 1 pound lean ground beef may be substituted.
