Bruschetta with Tomato and Basil

Ingredients

  • 6 or 7 ripe plum tomatoes (about 1 1/2 lbs), 2 cloves garlic, minced. 1 tblsp extra virgin olive oil, 1 tsp balsamic vinegar, 6-8 fresh basil leaves, chopped. Salt & pepper to taste, 1 french bread, 1/4 cup olive oil

Step 1

Prepare tomatoes first. Parboil for 1 minute in boiling water that has just been removed from burner. Drain. Using a sharp small knife remove skins. Once tomatoes are peeled cut in halves or quarters & remove seeds & juice from their centers. Also cut out &discard stem area. Chop up tomatoes finely. Put tomatoes, garlic, 1 tblsp oil, vinegar in a bowl & mix. Add the chopped basil. Add s&p to taste. Slice bread on a diagonal about 1/2" thick. Coat 1 side with oil using a brush. Put on cooking sheet, oil side down. Top rack at 450 degrees toast 5-6 minutes til golden brown. Put on platter oil side up
