Squash - Green Chile Squash Fritters

Ingredients

  • 6 Yellow squash
  • 3 eggs
  • 1/4 teaspoon salt
  • Chopped green chile
  • Cheddar or colby cheese
  • Corn
  • 1 1/2 cup cornmeal and bread crumbs mixed
  • Red Chile flakes

Preparation

Step 1

Cook squash, drain and mash. Combine squash with eggs, cornmeal/bread crumbs, salt, red chile flakes, corn, cheese.

Heat vegetable oil to a depth of 2 inches in a heavy saucepan to 375 degrees

Drop by Tablespoon into oil; fry until golden brown…turning once.

Drain on paper towels
