- 12 corn tortillas
- cooking spray
- 1 Tbs. olive oil
- 1/4 c. minced fresh garlic
- 1 small onion, chopped
- 3 tsp. cumin
- 2 tsp. chili powder
- 1 pinch cinnamon
- 1 pinch cloves
- 1 28 oz. crushed tomatoes
- 1/4 c. fresh cilantro, chopped
- 2 15 oz. black beans, drained & rinsed
- 8 eggs
- 2 c. colby-jack cheese, shredded
Preparation
Step 1
Preheat 350 degrees. Lightly grease a 9X13 baking dish. Lightly mist tortillas with cooking spray. Place 1 or 2 @ a time in hot fry pan until they just start to bubble up, then flip to lightly brown other side. Line baking baking dish with tortillas in an overlapping pattern so the entire bottom of pan is covered & tortillas reach all the way up sides of dish.
Heat olive oil & saute garlic, onion & ½ of seasonings for 2 min. over medium heat. Add tomatoes; bring to boil & cook, stirring, for 2 min. Remove from heat & stir in cilantro.
Coat the beans with remaining seasonings & spread beans evenly over tortillas. Pour tomatoes over beans & crack eggs over them in an even pattern. Sprinkle with cheese & bake for 35 min. The eggs should be firm. Remove from oven & let set 10 min.
