  • 1 1/2 lb turnips
  • 1/2 cup heavy cream
  • 3 tsp. olive oil
  • 2 1/2 lbs rack of lamb
  • 5 tyme spigs
  • 1 cup dry marsala wine
  • 1 galic clove
  • 2 bunches spinach

Preparation

Step 1

Preheat oven to 400

cook turnips in water 10-15 minutes, return to pan add cream boil then simmer 4 minutes, puree

1 tsp oil is skilet, salt pepper cook lamb skin side down 5-8 minutes, tuck thyme under lamb turn over into oven to 125 15-20 minutes,

Drain fat add marsala to deglaze reduce by half

2 tsp oil in skillet with garlic and thyme add spinach salt pepper

cut lamb between bones serve as one plate
